The Famous Afritada



Chicken and Pork Afritada is a famous Filipino dish which for many households remains to be one of the most favorite meal for lunch and dinner. My mom used to cook this for us, and we would go home from school as early as we could to make sure we make it to dinner very early. Below is a simple recipe, which you can follow easily. Enjoy!! :)

Ingredients:
5-6 cups water
1 kilogram chicken,cut into medium-sized pieces
1/2 kilo pork, cut into cubes (you may choose any part you like)

2 white or native onions, quarter-sized
1 pack tomato sauce

5 tablespoon cornstarch, (dissolve in 1/4 cup water)
1 garlic (one head), mince or squashed
2 pieces of bay or laurel leaf

3 tbs sugar
3 tbs native vinegar
4 pieces potatoes cut into 4 parts
2 red bell peppers, cut into about 4 strips
fine or cracked salt to taste

ground pepper for some spice


Procedure:
1. Heat one large pan with vegetable oil. Brown the pork and chicken and set aside.
2. One a large casserole, saute garlic, onion, then add the meat. Add salt and ground pepper to taste.
3. Add tomato sauce and water, bring to a boil. Add potatoes, carrots, and bell peppers. Cook until meat and  
    vegetables are tender.
4. Add sugar and vinegar. Adjust flavor according to your preference.
5. Pour the mixture of cornstarch and water while stirring the thickening sauce. 
6. Serve while hot.
